Pololi, Asia’s first poké (pronounced ‘poh-kay’) chain, was first set up in Hong Kong in 2014 by Stephanie Kudus. Specialising in ahi (Hawaiian for ‘tuna’). Poké originated in Hawaii almost 50 years ago and traditionally consists of fresh raw seafood, chopped into cubes and marinated in tantalising flavours— traditional Polynesian, American and Asian influenced.
